  • 1 tsp veg oil
  • 3 red peppers, sliced
  • 2 red onions, thinly sliced
  • 400g tin of black beans, drained
  • 2 crushed garlic cloves
  • 1 tbsp Cajun seasoning
  • 1 avocado
  • 1 lime, zest and juice
  • 1 Little Gem lettuce, shredded
  • 200g salsa
  • 8 tortilla wraps
  • 50g grated cheddar
  • Fry the peppers, onions, beans, garlic and cajun seasoning in the oil for 8 mins, or until softened. Mash the avocado, lime juice and zest together, and season well with pepper. Warm your wraps, stuff with lettuce, spicy veggies, smashed avocado, salsa and cheese… so simple, so delicious!
