Caramelised Miso Chicken Wings
- 2 tbsp oil
- 4 tbsp white miso paste
- 1kg chicken wings
- 100g golden caster sugar
- 30g butter
- 1 small lime, juice only
- 1 tbsp white sesame seeds
- Preheat the oven to 200C. Mix the 2 tbsp of miso with the oil, then rub all over the chicken wings to coat. Season well, then bake in the oven for 45 mins. Meanwhile, dissolve the sugar in a saucepan with 2 tbsp of water. Once dissolved, increase the heat and boil to create an amber caramel. Remove from the heat, stir through the remaining miso, along with the lime juice and butter. Set aside.
- Remove the cooked chicken wings from the oven and pour the caramel all over, coating thoroughly. Sprinkle with sesame seeds, cook in the oven for 5 mins, then serve with your choice of sides.
