Caramelised Onion and Goat’s Cheese Crostini

  • 1 tbsp olive oil
  • 400g shallots, 6 halved, the rest thinly sliced
  • 25g butter
  • 12 slices of baguette
  • 125g soft goat’s cheese
  • 5g thyme leaves
  • Preheat the oven to 180C and heat the oil in a frying pan. Chuck all the shallots in the pan with a good grind of salt and pepper, then cook for 10 mins until golden-brown. Add the butter and transfer the pan to the oven, then roast for 10 mins before setting aside. Return the shallot halves to the oven and roast for 10 mins more, or until nicely caramelised.
  • Meanwhile, lightly toast the slices of baguette. Spread with a generous portion of goat’s cheese, then spoon the caramelised shallots on top. Sprinkle with thyme leaves and season with black pepper. Serve hot or cold - they’re delicious!
