Caramelised Onion Couscous

  • 2 tbsp olive oil
  • 4 sliced shallots
  • 1 sliced red onion
  • Salt and pepper
  • 25g butter
  • 150g brown mushrooms, halved
  • 1 smoked garlic clove, finely chopped
  • 125g couscous
  • Chopped parsley
  • Fry the shallots and onions in the oil, and season well. Cook for about 8 mins, until lightly caramelised. In a separate pan, heat the butter and cook the mushrooms and garlic for 3 mins.
  • Pop the couscous in a bowl and cover with boiling water. Cover with film, and leave to absorb. When ready, remove the film and fluff with a fork, before seasoning liberally. Pile onto a plate, and top with the caramelised onions and mushrooms. Garnish with parsley. Yummy!
