Method

  • For the Seasoning
  • 1 tsp salt
  • 2 crushed garlic cloves
  • 1 tbsp crushed allspice berries
  • 1 tbsp crushed black pepper
  • 3 bay leaves
  • 1 tbsp chilli sauce
  • 1 tbsp dark soy
  • Salt and pepper
  • For the Fish
  • 1 onion, chopped
  • 1 red and 1 green capsicum, chopped
  • 2 sliced garlic cloves
  • 2 snapper (or bream), cleaned and gutted
  • Drizzle of oil
  • Preheat the oven to 190C and mix all of the seasoning ingredients in a bowl. Chop the onion, capsicums, and garlic, and arrange in the base of an ovenproof dish.
  • Place the dish on top of the veggies, and sprinkle generously with the seasoning. Drizzle with oil, and cook for 20-30 minutes, or until the fish is cooked through and the vegetables are tender. Serve at once with flatbreads or rice.
