Cashew Chicken



  • 2 tbsp oil
  • 1 star anise
  • 1 tsp Szechuan peppercorns
  • 4 cloves
  • 1 cinnamon stick
  • 1 tsp fennel seeds
  • 2 dried chillies
  • 1 sliced red onion
  • 300g chicken breast, cut into 2cm chunks
  • 2cm piece of ginger, cut into matchsticks
  • 1 tbsp rice wine
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 2 tsp brown sugar
  • Handful of cashew nuts
  • 2 sliced spring onions
  • Heat a wok and add the oil. When very hot, chuck in the peppercorns, star anise, cloves, cinnamon, fennel seeds and chillies. Cook for 20 seconds. Add the onion, chicken and all the rest of the ingredients except the spring onion. Stir fry for 3 mins, tossing the ingredients together. Season, then cook for another 3 mins until the chicken is ready. Serve with noodles or rice.
