Method

  • 1 large cauliflower, broken into florets
  • 1 lime, zest and juice
  • 2 cloves of garlic, chopped
  • 1 tbsp olive oil
  • 100g cashews
  • Salt and pepper
  • 25g parmesan
  • Preheat the oven to 180C. Boil a saucepan of water and add the cauliflower, blanch for 3 minutes, then drain. Meanwhile, mix the lime with garlic and oil, pop the cauliflower and cashews in a roasting tin and pour over the lime and garlic mix, toss to combine, and season well.
  • Roast for 10 minutes, then sprinkle over the cheese. Roast for another 10-15 mins, until the nuts and the cauliflower are golden. Serve.
