Cauliflower and Cheese Rice Pot

  • 500g cauliflower florets
  • 150g baby spinach leaves
  • 1 tbsp olive oil
  • 1 sliced red onion
  • 150g cubed halloumi
  • 1 crushed garlic clove
  • Thumb-sized piece of ginger, grated
  • 1 tsp turmeric powder
  • 1 tbsp curry powder
  • 500g cooked basmati rice
  • 1 sliced red chilli
  • Boil the cauliflower in salted water for 5 mins, then add the spinach and cook for 2 mins more. Drain and set aside.
  • Heat the oil in a large casserole dish and fry the onion for 5 mins. Add the halloumi and cook for 5 mins more, then stir in the ginger, turmeric, garlic and curry powder. Cook for another minute, then stir through the cooked rice, cauliflower and spinach to heat through. Season, scatter with chilli and serve.
