Ingredients
Method
- 1 tbsp chilli oil
- 1 cauliflower, broken into florets
- 350g sliced zucchini
- 2 sliced red onions
- 2 wholemeal pitta, cut into chunks
- 2 tsp cumin seeds
- 150g Greek yoghurt
- 2 crushed garlic cloves
- 15g chopped parsley
- 30g toasted sliced almonds
- Preheat the oven to 220C. Heat the oil in a frying pan and cook the cauliflower, zucchini and onion for about 10 mins, or until golden. Tip into a roasting tin with some seasoning, then scatter in the pitta pieces and the cumin. Mix well and bake for 15 mins.
- Combine the garlic, yoghurt and parsley with a little salt and pepper, then spoon the veggie mix onto serving plates and drizzle with the yoghurt dressing. Scatter with the almonds, then serve and enjoy!
