  • 1 whole medium cauliflower, leaves removed and sliced
  • 1 beaten egg
  • 80g dried breadcrumbs
  • 30g flour
  • Pinch of chilli flakes
  • 3 tsp smoked paprika
  • 400ml veg oil
  • Buns, mayo, slaw and rocket leaves, to serve
  • Cut 2 ‘steaks’ about 2cm thick from the centre of the cauliflower, being sure to keep the stem intact. Place the beaten egg, flour and breadcrumbs in three separate bowls. Mix the smoked paprika, chilli flakes and some salt into the flour. Stir the remaining paprika into the breadcrumbs and set aside.
  • Dredge the cauliflower steaks in the flour, then coat in the egg and breadcrumbs. Shallow fry in hot oil for 3 mins on each side, then drain on kitchen paper. Stuff into buns with rocket leaves, slaw, mayo and anything else you fancy, and serve with chips or salad.
