- 1 cauliflower, cut into florets and finely sliced
- 3 tbsp olive oil
- 3 tbsp white wine vinegar
- 1 tbsp mustard
- 2 apples, diced
- Handful of sultanas
- Chopped parsley
- Handful of chopped walnuts
- Add the olive oil, vinegar and mustard to a large bowl with some seasoning, and whisk to combine. Add the apples, sultanas, a good handful of chopped parsley and the cauliflower, and toss together to coat in the dressing.
- Toast the walnut pieces in a dry pan for a couple of minutes, then tip into the salad and serve. Delicious!
