Chargrilled Zucchini Salad



  • 6 zucchini, cut into long strips
  • 2 tbsp olive oil
  • 1 red chilli, deseeded and finely chopped
  • Salt and pepper
  • 1⁄2 lemon, juice only
  • Handful of fresh mint and basil, chopped
  • Toss the zucchini strips in olive oil, chilli, salt and pepper, and then grill on a very hot griddle for about 4 minutes on each side. You want them tender but still with a bit of crunch, and featuring some nice char lines.
  • Toss the griddled zucchini in the lemon juice and herbs, along with another good slug of olive oil, and serve as a side or as a light lunch with a friend.
