Cheese, Asparagus and Prosciutto Pastry Twists

  • 500g trimmed asparagus spears
  • 2 tsp olive oil
  • 375g ready-rolled puff pastry
  • 100g sliced prosciutto
  • 100g grated Gruyere cheese
  • 1 beaten egg
  • Preheat the oven to 200C. Toss the asparagus in oil and seasoning, and unroll the pastry and cut 6 equal-sized squares. Lift the pastry - still on its paper - onto a baking sheet.
  • Wrap 3-4 asparagus spears in a slice of prosciutto and arrange on the pastry at an angle, so the tip of the spear points to a corner of the square. Add a handful of grated cheese, then brush opposite points of the pastry with egg and fold over. Press to join, then brush with more egg and season with pepper. Bake for 25 mins or until crisp, golden and puffed, then serve hot or cold.
