Cheesy Chicken, Mustard and Bacon Parcels
- 125g ball of mozzarella cheese, torn into small pieces
- 50g grated mature cheddar cheese
- 1 tbsp wholegrain mustard
- 4 chicken breast fillets, skin and bone removed
- 8 rashers of smoked streaky bacon
- Preheat the oven to 200C. Mix the mustard with the cheeses until combined, then cut a pocket into the side of each chicken breast and stuff with the cheese mixture.
- Wrap each of the stuffed chicken breasts with 2 bacon rashers. Season well, then roast on a baking sheet for 25 mins. When ready, leave to rest for 5 mins before serving hot. Perfect!
