Chicken and BBQ Beans Casserole

  • 2 tbsp olive oil
  • 8 boneless chicken thighs, skin on
  • 3 diced rashers of smoked bacon
  • 1 diced onion
  • 1 tbsp mild chilli powder
  • 2 crushed garlic cloves
  • 2 x 400g tins of baked beans in tomato sauce, drained
  • 200g smoked sausage, sliced into 0.5cm slices
  • 3 tbsp Worcestershire sauce
  • 1 tbsp soy sauce
  • 2 tbsp red wine vinegar
  • 3 thyme sprigs
  • 100ml ketchup
  • 50g brown sugar
  • 260ml chicken stock
  • 1 deseeded and chopped red chilli
  • Preheat the oven to 200C. Heat a large frying pan and fry the chicken in the oil for 1 minute on both sides, then remove from the pan and set aside.
  • Add all the remaining ingredients to a casserole dish with some seasoning, mix well, and lay the chicken thighs on top. Cover with the lid and cook for 30 mins in the oven. When ready, remove the chicken, stir the mixture and then return the chicken to the casserole. Cook uncovered for another 10 mins, then serve with crusty bread.
