Chicken Kofta
- 1 tbsp olive oil
- 1 diced red onion
- 1 chopped garlic clove
- 1 chopped red chilli
- 500g chicken mince
- 1 tbsp baharat spice mix
- 50g fresh white breadcrumbs
- 1 beaten egg
- Chopped coriander
- Salad, to serve
- Cook the onion in the oil for 4 mins to soften, then stir in the garlic and chilli and cook for a minute more. Season well and set aside. Mix the mince in a bowl with the remaining ingredients, then add to the onion mixture and form with damp hands into 12 kofta oval balls.
- Preheat your grill to a medium setting. Cook the koftas for 10 mins on each side, or until cooked through, golden and crisp. Serve with salad.
