Ingredients
Method
- 225g chicken livers
- 2cm piece of ginger, finely chopped
- 6 cloves of garlic, finely chopped
- 1 green chilli, finely chopped
- 1⁄4 tsp turmeric
- 1⁄2 tsp cumin
- 1 tsp coriander powder
- 1⁄2 lemon, juice only
- 2 tbsp oil
- 3 tbsp fresh coriander
- 1 tbsp mint, chopped
- 1 onion, thinly sliced
- Salt and pepper
- 1 pack of flour tortillas
- Clean and dice the chicken livers, then mix together the garlic, ginger, chillu, cumin, turmeric, lemon juice, salt and pepper, and the livers in a bowl.
- Heat up the oil in a heavy frying pan, then toss in the livers. Don’t stir them too much, just toss in the pan for about 4 minutes. You want them golden on the outside but still a bit pink in the middle. Toss in the herbs, add a squeeze of lemon, and serve immediately in your tortillas with more chopped coriander, mint, lime juice and some sliced onion.
