  • 500g chicken mince
  • 90g green pesto
  • 1 diced red onion
  • 2 crushed garlic cloves
  • 75g grated cheddar
  • 4 burger buns
  • Lettuce, to serve
  • Sweet potato wedges, to serve
  • Preheat the oven to 220C and line a baking tray with paper. Mix the mince, all but 4 tsp of the pesto, the garlic, red onion and seasoning in a bowl, then shape into 4 patties and arrange on the baking tray. Bake for 20 mins, then divide the cheese between the burgers and cook for 5 mins more.
  • Have the burger buns and add to the baking tray for the last 2 mins of the cooking time. Spread the buns with the remaining pesto and some mayo, if you like, then top with the burgers and some lettuce leaves, and serve with sweet potato wedges.
