Chicken Piri-Piri with Smashed Sweet Potatoes



  • 900g peeled sweet potatoes, cut into chunks
  • Oil for drizzling
  • 8 chicken thighs
  • 2 red onions, cut into wedges
  • 25g piri-piri spice mix
  • 300g tenderstem broccoli
  • Preheat the oven to 180C. Toss the potatoes with oil and seasoning, and tip into a large roasting tin. Push to one side of the tin. Toss the chicken thighs and onion in the spice mix and some oil and seasoning, and add to the other side of the tin. Roast for 40 mins, stirring halfway through. Add the broccoli to the tin, drizzle with oil and seasoning, and roast for 10 mins more.
  • Remove the chicken, broccoli and onions from the tin, and roughly smash the potatoes with a fork, mixing in all the chicken juices and spices from the tin as you go. Spread the mash onto a serving platter, then top with the chicken, onions and broccoli. Serve to share.
