Chicken Satay and Kale Udon Noodles

Ingredients

  • 300g wok-ready udon noodles
  • 2 chicken breasts, cut into 1cm slices
  • 2 tbsp soy sauce
  • 2 tsp ground cumin
  • 80g crunchy peanut butter
  • Pinch of chilli flakes
  • 1 tbsp oil
  • 1 chopped onion
  • 20g grated ginger
  • 2 sliced garlic cloves
  • 200g shredded kale
  • Toss the chicken with half the soy sauce and cumin, then set aside. Mix the remaining soy sauce and cumin in a bowl with the peanut butter and chilli flakes, loosening with 5 tbsp boiling water to make a paste. Heat ½ tbsp of oil in a wok and stir fry the chicken for 4 mins or until just cooked. Remove to a plate and set aside.
  • Add the remaining oil to the wok and fry the onion for 1 minute. Add the ginger and garlic, sizzle for 30 seconds, then add the noodles, kale and chicken. Toss everything until piping hot, then pour in the sauce and stir to coat. Serve immediately.
