Chicken Thigh and Chorizo Mediterranean Bake



  • 650g chicken thigh fillets, skin and bone removed
  • 1 broccoli, broken into florets
  • 500g halved new potatoes
  • Handful of kalamata olives
  • Medium chorizo ring, sliced on the diagonal
  • 4 garlic cloves
  • 2 tbsp olive oil
  • 2 tsp smoked paprika
  • Preheat the oven to 180C. Scatter the chicken, potatoes, broccoli, chorizo, garlic and olives on a baking tray and drizzle with olive oil, paprika and seasoning. Toss well to combine.
  • Roast in the oven for 40 mins or so, tossing halfway through the cooking time. Once the chicken is cooked through and the vegetables are tender, serve immediately with some crusty bread.
