Chicken Thigh, Lemon and Orzo One-Pot

  • 8 whole chicken thighs
  • 1 tbsp sea salt
  • 1 sliced unwaxed lemon
  • 1 sliced onion
  • 3 sliced garlic cloves
  • 300g orzo
  • 200g broccolini
  • Preheat the oven to 200C. Season the chicken all over with the salt and some pepper then place in a lidded ovenproof pan, skin-side down. Cook for 20 mins or until the skin has crisped up nicely, then transfer to a plate. Add the onion, garlic and lemon slices to the pan and cook for 5 mins, then add the orzo and mix well. Cook for 2 mins.
  • Return the chicken thighs to the pan and then pour in 450ml boiling water. Cover with the lid and transfer to the oven and cook for 35 mins. Add the broccolini to the pan and cook for another 10 mins or until the chicken is cooked through, then serve and enjoy with friends.
