Chicken with Apricots and Couscous

Ingredients

Method

  • 25g butter
  • 1 tbsp olive oil
  • 2 sliced onions
  • 500g chicken breast, cut into 2cm chunks
  • 1 tsp each ground turmeric and cumin
  • 1 cinnamon stick
  • ½ tsp ground ginger
  • 400ml chicken stock
  • 12 soft dried apricots, halved
  • ½ lemon, juice only
  • 3 tbsp chopped coriander
  • Couscous, to serve
  • Add the butter and oil to a large saucepan and cook the onions for 5 mins to soften, then toss in the chicken chunks and cook for 4 mins or until golden. Stir in the dry spices, then add the stock and some seasoning. Cover with the lid and bring to a simmer.
  • Stir the apricots into the pan and cook for another 15 mins, then add a good squeeze of lemon and the chopped coriander. Mix well and serve with a heap of cooked couscous.
