Ingredients
Method
- 55g pine nuts
- 1⁄2 large chicken breast
- 25g butter
- 1 tbsp olive oil
- Creamed leeks, to serve
- Put the pine nuts in a food processor and blend to a powder. Press this powder into one side of the chicken breast. Heat up the butter and olive oil over a medium heat, then fry the chicken for 5 minutes on each side, or until cooked and golden. Serve with creamed leeks or veggies in a cream sauce.
