Chilli and Peanut Noodles



  • 100g noodles
  • Salt
  • 50g peanut butter
  • 1 tbsp grated ginger
  • 1 tbsp sweet chilli sauce
  • 2 tbsp soy sauce
  • 1 lime, juice only
  • 2 chopped spring onions, to garnish
  • 1 tbsp roasted salted peanuts, chopped, to garnish
  • Cook the noodles to packet instructions, and drain. Meanwhile, whisk the sauce ingredients together in a bowl, along with a few dashes of water to loosen.
  • Add the sauce to the noodles, heat through for a minute, and garnish with spring onions and peanuts. Quick, easy, and totally delicious!
