Chinese Smoked Salmon Salad
- 50g rice vermicelli noodles
- 1 tsp sesame oil
- 4 grated pickled beetroots
- 1 carrot, spiralised into noodles
- 1 cucumber, spiralised into noodles
- 1 daikon, spiralised into noodles
- 1 pink grapefruit, segmented
- 2 spring onions, sliced
- To Serve
- 4 slices of smoked salmon
- Handful of toasted peanuts
- 2 tbsp plum sauce
- Cook the noodles according to pack instructions, then drain and toss with the sesame oil. Keep chilled in the fridge.
- Toss together all of the other salad ingredients together, then lay on plates topped with the sliced smoked salmon and a drizzle of plum sauce.
