Chipotle Tofu with Smashed Avo



  • 2 tbsp olive oil
  • 225g smoked firm tofu, cubed
  • 3 tbsp chipotles in adobo
  • ½ tsp salt
  • 3 spring onions, sliced
  • 150g halved cherry tomatoes
  • Tacos to serve
  • 1 avocado
  • 1 lime, zest and juice only
  • Make the smashed avocado by mashing the avocado flesh with ½ tsp of salt and the lime zest and juice (you can add some chilli flakes or tahini, if you fancy it). Season to taste, and set aside.
  • Heat a frying pan and add the oil, then fry the tofu until crisp. Add the chipotles, stir-fry for a few mins, then season and add the tomatoes and spring onions. Cook on a medium heat for 8 mins, then serve with the avocado and tacos. Yum!
