Ingredients
Method
- 100g cooking chorizo, skin removed
- 3 pork sausages, squeezed from skins
- ¼ tsp smoked paprika
- 1 tbsp lime juice
- Chopped coriander
- 200g tin of mixed beans, drained
- 1 egg, beaten
- 1.5 tbsp olive oil
- 2 rolls, avocado, salads etc to serve
- Pulse the sausagemeat, chorizo, paprika, lime juice and coriander until well combined, then add the beans and some seasoning, and pulse again to mix. Tip into a bowl and mix in half the egg to bind. Shape with damp hands into two chunky patties, then cover and chill for 15 mins. Preheat the oven to 200C.
- Heat the oil in a pan and fry the patties for 3 mins on each side, then transfer to a baking sheet and cook for 10 mins. Serve stuffed into rolls with avocado, salad and your choice of other fillings.
