Ingredients
Method
- 250g chorizo
- 500g cooked new potatoes, halved
- 200g mixed mushrooms, sliced
- 4 rosemary sprigs
- 1 onion, sliced
- 1 garlic clove, crushed
- 1 lemon
- Chop the chorizo and fry in a large pan until crisp. Remove and set aside, leaving the oil and juices in the pan. Toss in the cooked new potatoes, and fry until crisp and golden - you can add a glug of olive oil if necessary. Remove and set aside.
- Fry the mushrooms with the rosemary until golden, then add the onion and garlic. Cook everything until lightly browned and soft. Return the chorizo and potatoes to the pan, cook for 2 mins, and add a good squeeze of lemon and plenty of seasoning. Serve immediately.
