Christmas Red Cabbage Side
- 2 tbsp butter
- 1 red onion, chopped
- 1 cooking apple diced
- 1kg red cabbage, sliced
- 3 tbsp red wine vinegar
- 1 tbsp brown sugar
- 1 tsp salt
- 3 cloves
- Handful of dried mixed fruit, chopped
- Preheat the oven to 150C. Melt the butter in a casserole and fry the onion until tender but not coloured. Add the other ingredients, stir well and pour in 100ml of water. Cover with the lid and cook in the oven for 30 mins, until the cabbage is sweet, sour and softened. Garnish with extra butter, and serve as a festive side.
