Classic Cheese Souffle Recipe
What you'll need:
- 100g strong Cheddar cheese, grated
- 50ml double cream
- 2 egg yolks, beaten
- Salt and pepper
- 2 egg whites

Method
First
Preheat your oven to a solid 200C. Toss your grated cheese and cream into a small saucepan, and gently heat until they’re nicely melted together. Remove from the heat and allow to cool for a minute or two, then stir in the egg yolks, and season well with salt and pepper.
Second
Take a decent sized bowl, and add the eggs yolks. Whisk until they form stiff peaks. Add a spoonful of your egg white mix to the melted cheese mixture, and gently stir. Then carefully fold in the remaining egg whites, making sure to retain as much volume as possible.
Third
Take your smallest frying pan, and put it on a medium heat on your hob. Add the egg and cheese mixture to the pan, then transfer the whole lot to the oven, and bake for eight minutes. Serve in the pan or on a plate, and enjoy this soft, creamy, cheesy, classic French delight!
