  • 2 tbsp olive oil
  • 2 x 150g chicken breast fillets
  • ½ chopped onion
  • 1 chopped garlic clove
  • 100ml double cream
  • 2 tbsp capers
  • Salt and pepper
  • Preheat the oven to 220C. Add 1 tbsp of oil to a frying pan and season the chicken breasts. Cook the chicken in the pan for 2 mins on each side to seal, then transfer to a plate.
  • Add the onion and remaining oil to the pan and cook for 5 mins to soften. Add the garlic, cook for a minute more, then pour in the cream and 200ml water. Stir through the capers, bring to a simmer and return the chicken to the pan with some seasoning. Bake in the oven for 15 mins, then serve with crusty bread or rice.
