- 4 x 125g cod fillets
- 80g red pesto
- 8 rashers of smoked streaky bacon
- 1 tbsp olive oil
- Black pepper
- Preheat the oven to 220C. Season the fish fillets and spread with the pesto on one side. Stretch the bacon rashers with the back of a knife to elongate slightly, then wrap each cod fillet with 2 rashers, avoiding any overlap.
- Place the cod parcels on a baking tray and brush with olive oil. Bake for 15 mins or until the bacon is crisp and the fish is cooked through, then serve with chips and salad.
