Cod Poached in White Wine

Ingredients

Method

  • 1 tbsp veg oil
  • 4 cod fillets
  • Salt and pepper
  • 1 lemon, zest only
  • 1 dried chilli
  • 1 sliced garlic clove
  • 125ml white wine
  • 500ml milk
  • 2 tbsp mascarpone cheese
  • 4 tbsp chopped basil
  • Mashed potato, to serve
  • Warm up the oil in a nice big pan, then season the fish well and place into the pan to seal on both sides. Add the lemon zest, chilli, and garlic, and gently fry for about 2 minutes.
  • Pour in the wine and the milk, and bring it all up to the boil. Reduce to a gentle simmer, and cover with a lid (leave a small gap) to poach for about 8 minutes. Remove from the heat, and transfer the fish to the serving plates. Gently remove the skin, if there is any. Spoon the mascarpone into the sauce and stir well, then season, and add the basil. Serve the cod with mashed potato and plenty of that lovely creamy sauce all over the top!
