Coffee-Braised Short Ribs

Ingredients

  • 1 tbsp oil
  • 1kg beef short ribs
  • 1 chopped onion
  • 3 chopped garlic cloves
  • 300ml medium-strength black coffee
  • 300ml quality beef stock
  • 50g ancho chilli paste
  • 100g chopped dates
  • 2 star anise
  • 2 x 400g tins of black beans, drained

Method

  • Heat the oil in a casserole dish. Season the ribs and brown in the pan for 5 mins, then remove and transfer to a plate. Add the garlic and onion to the pan and cook for 10 mins, then stir in the coffee, stock, dates, star anise, stock and some seasoning. Bring to a simmer, return the ribs to the pan, then cover and cook gently for 2 hours.
  • Skim any fat that rises to the surface, then stir through the beans. Cover and cook for another 45 mins, or until the beef is very tender and falling from the bone. Divide the ribs, beans and sauce between shallow bowls, then serve with rice or tortilla chips and enjoy.
