Corn Fritters with Smashed Avocado and Pickled Jalapeños

Ingredients

  • 400g tinned corn, drained
  • 150g self-raising flour
  • 200ml oat milk
  • 1 tsp ground cumin
  • Salt and pepper
  • Oil for frying
  • 3 avocados
  • Juice of 1 lime
  • 2-3 tbsp pickled jalapeños
  • Stir corn, flour, oat milk, cumin, salt and pepper into a rough batter — it should be thick. Fry heaped spoonfuls in oil over medium heat for 3 mins each side until golden and set.
  • Smash avocado with lime juice and salt. Serve fritters stacked on avocado with pickled jalapeños on top.
