Corn, Shrimp, and Cheese Tortillas

  • 2 tbsp olive oil
  • 4 large shrimp or king prawns, raw
  • 1 shallot, finely chopped
  • 1 jalapeno, finely chopped
  • 3 spring onions, finely chopped
  • 30g cream cheese
  • 50g mayo
  • 150g strong cheddar, grated
  • 300g cooked sweetcorn
  • Black pepper
  • 2 soft tortillas
  • Preheat your grill to high. Meanwhile, heat up the oil in a frying pan, and toss in the shrimp until pink and cooked through. Remove, and roughly chop.
  • In the same pan, fry the shallot, jalapeno, and spring onions to soften, then remove from the heat and stir in the cream cheese, mayo, cheddar, sweetcorn, and cooked shrimp, and grill the whole lot in the pan until bubbling. Serve hot with tortillas for a Tex-Mex feast!
