Ingredients
Method
- 1 x homemade or shop-bought quiche pastry case
- 1 courgette, thinly sliced
- Bunch of spring onions, sliced
- 100g stilton, crumbled
- 2 tbsp red onion marmalade
- 1 tsp thyme leaves
- 150ml double cream
- 1 egg
- 2 egg yolks
- Preheat the oven to 180C. Tip the spring onions and courgettes into a tea towel, and squeeze as much excess water out as you can. Pop into a mixing bowl, and stir through the cheese, marmalade, and thyme. Season, and spread over the bottle of the tart base.
- Whisk the cream, whole egg, and egg yolks together with some seasoning. Pour over the courgette mixture, and bake for 35 mins, or until just set. Remove, leave to cool, then serve with salads in slices.
