- 750g white potatoes, peeled and cut into chunks
- 150g peas
- 1 beaten egg
- 150g shredded crab meat
- 30g coriander, leaves and stalks separated and chopped
- 5cm piece of ginger, grated
- 50g brown breadcrumbs
- 1 grated garlic clove
- 1 lemon, ½ zested and juiced, remaining cut into wedges
- 1 tbsp oil
- Boil the potatoes until tender, adding the peas for the final 2 mins of cooking time. Drain well, then leave to steam-dry. Tip the potatoes and peas into a bowl and mash well, then stir in the crab meat, eggs, coriander stalks and 2 tbsp of chopped coriander leaves, the breadcrumbs, ginger and some seasoning. Mix to combine.
- Form the potato mixture into 8 patties. Heat the oil in a frying pan and fry the patties for 3-5 mins on each side, or until golden and piping hot. Serve with mushy peas, lemon wedges and some salad, if you fancy.
