Crab, Avocado and Mango Salad

Ingredients

Method

  • 1kg of white crab meat, chopped
  • 1 ripe mango, peeled and cut into cubes
  • 2 avocados, cut into cubes
  • 1 red onion, sliced
  • 1 garlic clove, sliced
  • ½ red chilli, de-seeded and sliced
  • 2 sprigs of fresh thyme, leaves picked
  • Juice of 1 lime
  • 2 baby gem lettuce, leaves separated
  • A splash of olive oil
  • In a large bowl, combine all of the ingredients except for the gem lettuce leaves, and season well.
  • Mix together gently, and then spoon the mixture into the lettuce leaves to serve.
