Crab, Avocado and Mango Salad
- 1kg of white crab meat, chopped
- 1 ripe mango, peeled and cut into cubes
- 2 avocados, cut into cubes
- 1 red onion, sliced
- 1 garlic clove, sliced
- ½ red chilli, de-seeded and sliced
- 2 sprigs of fresh thyme, leaves picked
- Juice of 1 lime
- 2 baby gem lettuce, leaves separated
- A splash of olive oil
- In a large bowl, combine all of the ingredients except for the gem lettuce leaves, and season well.
- Mix together gently, and then spoon the mixture into the lettuce leaves to serve.
