Crayfish and Avocado Toast
- 2 avocados
- 10 cherry tomatoes, cut into quarters
- 200g crayfish tails, cooked (or use prawns)
- 2 sliced spring onions
- 5 drops of Tabasco
- ½ tsp Worcestershire sauce
- 4 slices of seeded sourdough
- 2 tbsp quality mayo
- Olive oil, for drizzling
- Scoop out the avocado flesh and mash with a fork. Mix in the tomatoes, and fold in the crayfish tails and spring onions before stirring in the mayo. Season with Tabasco and Worcestershire sauce, and some salt and pepper. Pile the mixture onto slices of griddled sourdough, drizzle with olive oil and finish with some more black pepper. Perfect!
