Ingredients
Method
- 1 tbsp veg oil
- 4 cod fillets
- Salt and pepper
- 1 lemon, zest only
- 1 dried chilli
- 1 garlic clove, sliced
- 125ml white wine
- 500ml milk
- 2 tbsp mascarpone cheese
- 4 tbsp chopped basil
- Mashed potato, to serve
- Season the fillets and place in a pan with some oil. Seal on both sides over a low heat, without colouring the flesh. Add the zest, garlic, and chilli, and gently fry for 2 minutes. Add the wine and milk, bring to the boil, and simmer for 8 minutes.
- Remove from the heat and transfer the fish to warm plates, and gently pull off the skin. Add the mascarpone to the pan and stir into the sauce, before seasoning and adding basil. Serve with creamy mashed potatoes and plenty of your thick, creamy sauce.
