Crispy Grilled Oysters



  • 8 shucked fresh oysters
  • 15g butter
  • 1 chopped shallot
  • 1 tsp chopped chervil
  • 150ml double cream
  • 30g grated gruyere cheese
  • 1 tbsp breadcrumbs
  • Preheat the grill. Arrange the oysters in the bottom half the shells on a baking sheet. Melt the butter and gently cook the shallot until soft, then stir in the cream, chervil and some seasoning. Place a spoonful of the sauce onto each oyster and sprinkle with the cheese, followed by the breadcrumbs. Grill for 3-4 mins or until golden, then serve with crusty bread.
