Curried Chicken and Potato Traybake



  • 8 chicken drumsticks
  • 3 tbsp olive oil
  • 1 tsp each garlic and ginger paste
  • 1 tsp each garam masala and turmeric
  • 150ml yoghurt
  • 500g baby potatoes, halved
  • 4 chopped tomatoes
  • 1 chopped red onion
  • Small pack of coriander, chopped
  • Tip the drumsticks into a large bowl with the garlic, ginger, spices, 1 tbsp of oil and 2 tbsp of yoghurt. Toss together, then leave to marinate for at least 30 mins. Heat the oven to 180C.
  • Place the potatoes in a roasting tin with the rest of the oil and some seasoning. Add the marinated drumsticks and roast for 45 mins, or until cooked and golden. Scatter with onion, tomatoes, coriander and some seasoning, and serve with a dollop of yoghurt and some flatbreads.
