Curried Pork and Grains Salad
- 50g bulgur wheat
- 1 tsp curry powder
- ¼ tsp cumin seeds
- 1 tsp veg stock powder
- 2 dates, sliced
- 3 spring onions, sliced
- 4 tsp chopped mint leaves
- Handful of chopped coriander
- ¼ cucumber, chopped
- 2 tomatoes, sliced
- 120g leftover cooked pork or ham
- Tip the bulgur wheat into a small pan with the cumin seeds, veg stock powder, dates, spring onions, and curry powder. Cover with 300ml boiling water, and cook for 8 mins or until the liquid has been absorbed. Leave to cool.
- Stir in the tomatoes, pork, mint, coriander, and cucumber, then serve in bowls topped with lemon wedges.
