Deep-Fried Olive Canapes
- 100g panko breadcrumbs
- 4 crushed dried juniper berries
- 175g feta-stuffed green olives
- 3 tbsp flour
- 1 beaten egg
- Oil for frying
- Lemon mayo, to serve
- Crush the breadcrumbs in a food processor and tip into a shallow dish with some seasoning and the juniper berries. Toss the olives in the flour and dip in the beaten egg, then roll in the breadcrumb mixture to coat. Fry in oil at 180C or at sizzling temperature for 2 mins, or until golden and crisp. Drain on kitchen paper and serve with lemon mayo.
