  • 2kg pork spare ribs
  • 125g honey
  • 4 tbsp red wine vinegar
  • 6 tbsp ketchup
  • 1 orange, zest and juice
  • 2 tsp chilli powder
  • Lay the ribs in a shallow dish and mix together the remaining ingredients. Pour the marinade all over the ribs, turn to coat, then cover and chill for 4 hours.
  • Transfer the ribs to a roasting tin and pour in the marinade and some seasoning. Bake for 1.5 hours, basting regularly after half the cooking time. When the meat is falling from the bone, pile onto serving plates. Heat the pan juices in a saucepan for 5 mins to thicken, then pour over the ribs to serve - yum!
