Easy Cajun Black Bean Chilli

  • 3 tbsp olive oil
  • 2 chopped onions
  • 4 chopped garlic cloves
  • 2 red capsicums, cut into chunks
  • 1 tbsp Cajun seasoning
  • 2 x 400g tins of chopped tomatoes
  • 400ml veg stock
  • 2 x 400g tins of black beans, drained
  • 2 tsp habanero chilli paste
  • Tortilla chips and chopped coriander, to serve
  • Cook the onions, garlic and capsicums in 2 tbsp of oil for 15 mins to soften. Add the Cajun seasoning, cook for a minute, then stir in the stock and tomatoes. Simmer for 15-20 mins to thicken.
  • Add the beans and chilli paste to the pan and cook for another 5 mins. When ready, serve with a scattering of coriander, a handful of tortilla chips and anything else you fancy.
