Ingredients
Method
- 400g cauliflower florets
- 2 tbsp olive oil
- 1.5 tsp ground cumin
- 80g flour
- 50g grated cheddar
- Chopped coriander
- Salt and pepper
- Add the cauliflower, cumin and olive oil to a bowl and mix and season well. Fry for 8 mins or until just browned and tender, then remove from the heat and leave in the pan.
- Meanwhile, make your flour tortillas by mixing the flour, a pinch of salt and 50ml of water to form a dough. Knead for a few mins or until smooth, then divide into 6 even-sized balls. Roll each ball into a 10cm circle, and then fry in a dry pan for a minute or two, until lightly toasted. Arrange the cauliflower and cheese on the tortillas, sprinkle with coriander and serve.
